Moroccan Chicken Salad

  • Prep Time: 20 minutes
  • Serving Size: 5
  • 1 (5 1/2-ounce) box Couscous With Toasted Pine Nuts
  • 1/3 cup Dark Or Light Raisins
  • 1 (10-ounce) package Chicken Breast
  • 1 Orange, Yellow Or Red Bell Pepper, Seeded And Diced
  • 1/4 cup Chopped Or Slivered Red Onion
  • 2-3 tablespoons Minced Fresh Cilantro Or Parsley
  • 1/2 cup Balsamic Vinaigrette Dressing, Divided
  • 1 head Romaine Lettuce
  • Prepare couscous following package instructions. Add raisins and fluff with a fork. Place couscous in a large bowl and allow to cool. Add chicken, pepper, onion and cilantro. Add 1/4 cup vinaigrette and toss together gently, but thoroughly. Serve salad on a bed of romaine. Drizzle with remaining dressing.
