                        Salsa Corn Cups
            Ingredients for 5-6 Servings

    2 tbsOlive oil
 - 
    14 ozFrozen corn kernels
 - 
    1Red bell pepper, chopped
 - 
    3/4 cupRomano cheese, grated
 - 
    5Green onions, finely sliced
 - 
    1/2 cupCilantro leaves, chopped
 - 
    1/2 cupMayonnaise
 - 
    1/3 cupSour cream or Mexican crema
 - 
    2Garlic cloves, minced
 - 
    1Jalapeno pepper, seeded and minced
 - 
    2 tsChili powder
 - 
    1 tsGround cumin
 - 
    1 tsSmoked paprika
 - 
    1Lime, zested and juiced

Method
-             In a large pan over medium heat, add the olive oil and frozen corn and cooked until browned. Set aside to cool.
 -             Chop the bell pepper, chives, and cilantro leaves, then combine the chopped vegetables and corn in a large bowl.
 -             For the sauce, combine mayonnaise, sour cream, garlic, lime juice, lime zest, jalapeno, chili powder, cumin, and smoked paprika in a bowl. Combine into the corn mixture.
 -             Serve cold, and garnish with cilantro.
